BROCCOLI SLAW CHICKEN SALAD

Broccoli slaw chicken salad with soy-ginger dressing is full of fresh veggies and is crazy crunchy!

INGREDIENTS

FOR THE SALAD:
  1. 1 (12 oz.) bag of broccoli slaw
  2. 2 cups roughly chopped fresh baby spinach
  3. 2 cups chopped rotisserie chicken
  4. 1 cup sliced snow peas
  5. 1 cup sliced red bell pepper strips, cut in half
  6. 1/2 cup matchstick carrots
FOR THE SOY-GINGER DRESSING:
  1. 1/4 cup canola oil
  2. 2 tablespoons rice wine vinegar
  3. 2 tablespoons low-sodium soy sauce (or tamari)
  4. 1 tablespoon spicy chili and garlic sauce (see notes)
  5. 2 teaspoons fresh grated ginger (or sub a heaping 1/2 teaspoon of ground ginger)
FOR SERVING:
  1. 1/4 cup sliced green onions
  2. 1/4 cup chopped peanuts
INSTRUCTIONS
  1. Combine all of the salad ingredients in a large bowl and stir well to combine.
  2. Make the dressing. Add all of the dressing ingredients to a small jar, cover and shake really well to combine.
  3. Pour the dressing over the salad, mixing well, and serve topped with peanuts and green onions. (See notes below for make-ahead tips.)
