BROCCOLI SLAW CHICKEN SALAD
Broccoli slaw chicken salad with soy-ginger dressing is full of fresh veggies and is crazy crunchy!
INGREDIENTS
FOR THE SALAD:
- 1 (12 oz.) bag of broccoli slaw
- 2 cups roughly chopped fresh baby spinach
- 2 cups chopped rotisserie chicken
- 1 cup sliced snow peas
- 1 cup sliced red bell pepper strips, cut in half
- 1/2 cup matchstick carrots
FOR THE SOY-GINGER DRESSING:
- 1/4 cup canola oil
- 2 tablespoons rice wine vinegar
- 2 tablespoons low-sodium soy sauce (or tamari)
- 1 tablespoon spicy chili and garlic sauce (see notes)
- 2 teaspoons fresh grated ginger (or sub a heaping 1/2 teaspoon of ground ginger)
FOR SERVING:
- 1/4 cup sliced green onions
- 1/4 cup chopped peanuts

- Combine all of the salad ingredients in a large bowl and stir well to combine.
- Make the dressing. Add all of the dressing ingredients to a small jar, cover and shake really well to combine.
- Pour the dressing over the salad, mixing well, and serve topped with peanuts and green onions. (See notes below for make-ahead tips.)
